preparation

  • Place the coconut milk cans upside down in the refrigerator overnight. If you haven’t done that, you can now turn the cans upside down in the freezer for 30 minutes.

  • Preheat the oven to 180 degrees (top / bottom heat).

  • Put the oatmeal in a blender and process into flour.

  • Put oat flour, ground hazelnuts, cocoa powder, baking powder and Flavor Kick in a large bowl and mix together.

  • Add oat milk and apple pulp and mix into a smooth batter. Mix in the chocolate chips.

  • Divide the batter into 12 muffin cases. Fill 2/3 full.

  • Bake chocolate cupcakes for approx. 30 minutes.

  • Take coconut milk out of the fridge or freezer and open it the right way round. Now the upper part should be firm. Remove only the solid part and place in a bowl. Save the liquid part for smoothies, etc.

  • Add the Flavor Kick and use the food processor or hand mixer to beat the frosting until stiff for 1-2 minutes.

  • Put the frosting on the cooled cupcakes with a piping bag. Cut the protein bars into small pieces and decorate the frosting with them.
