150 g Zucchini
Wash the zucchini briefly. Grate finely with the help of a grater.
Put the grated zucchini in a sieve, add plenty of salt and let it steep for 10 minutes.
In the meantime, put the pancake mix and water in a bowl and stir to form a smooth batter. Firmly squeeze the zucchini and stir into the batter. Salt and pepper. Refine with herbs.
Grease a coated pan and let it get hot on medium-high heat.
Shape the dough into 4 pancakes in the pan and bake on both sides for 3-4 minutes until golden brown.
optional topping: vegan herbal quark,something Parsley, dill
Serve the zucchini pancakes with a little herb quark, parsley and dill.
