Vegan protein muffins are too dry for you? Not this one. The batter of our chocolate peanut cupacakes is nice and fluffy and the frosting is super creamy.
Preheat the oven to 180 degrees (top / bottom heat).
3 mature Bananas
Mash the bananas in a large bowl.
80 ml soy milk
Add soy milk and stir.
Add all remaining ingredients for the cupcakes one after the other and mix with a hand mixer to form a dough.
Divide the dough into 10 muffin cases using two tablespoons.
Bake at 180 degrees for 15 minutes.
In the meantime, prepare the frosting in a bowl: Simply beat all the ingredients with a hand mixer to form a smooth dough. Then chill until the muffins are done.
optional topping: chopped peanuts
As soon as the chocolate peanut cupcakes have cooled, top with the frosting and optionally decorate with chopped peanuts.
