Crunchy protein cookie base











Can you only conjure up a boring chia pudding from chia seeds? Oh no! The small round grains have it all behind their ears and become the perfect basis for your fruity and colorful cake – and all without baking. Because today we have no-bake desserts on our program. Our raspberry cake with a creamy layer of chia pudding is perfect for everyone who likes it heavenly sweet and beautifully fruity, but who like to do without refined sugar.

preparation

  • Put the oat drink and chia seeds in a bowl. Mix well. Min. Place in the refrigerator for 1-2 hours. But it is best to let it rest overnight in the refrigerator.

  • Now prepare the ground. Finely grind the cookie using a food processor. Melt coconut oil.

  • Mix the ground cookie with the coconut oil in a bowl. Spread the cookie dough in a springform pan (Ø 12-16 cm) lined with baking paper and press evenly. (A little tip: You can conjure up a smooth surface with a moistened drinking glass.) Put the mold in the refrigerator.

  • Ingredients:

    0,33 TL Jelly, 20 ml water

    Now prepare the chia pudding layer. Put the water together with the agar agar in a small saucepan and bring both to a boil for 1-2 minutes. Add the agar agar to the chia pudding and stir well. Then spread on the protein cookie base and put the springform pan in the freezer.

  • Now prepare the raspberry mixture. Cook the raspberries in a saucepan with a little water for 10-15 minutes until a thicker mixture (almost like jam) is formed. Add agar agar and cook for 1-2 minutes. Add Flavor Kick, stir briefly and remove the saucepan from the plate. Let the mixture cool down.

  • Ingredients:

    100 g Sojaquark

    Add the soy quark to the cooled raspberry jam and stir well.

  • Spread the raspberry mousse on top of the firm chia pudding layer.

  • Let the chia pudding cake rest in the freezer for at least 45 minutes (or until the different layers have set).

  • Decorate with fresh raspberries, strawberries and coconut chips as desired.

Our tip: Chocolate chia pudding cake

You can of course vary your chia pudding layer cake. Your creativity knows no limits. How about, for example, a coconut milk chia pudding layer topped with a fruity mango layer? Of course, our cake also goes well with chocolate. With a little flavor kick in the chocolate variety, you have a chocolatey chia pudding that you can combine perfectly with raspberries or strawberries.
