A pasta salad with smoked trout isn’t just a good idea for grilling. The aromatic spring salad is full of good ingredients like green asparagus, fennel, radishes and young rocket leaves. And on top of that comes a lemon dressing with capers. The smoked fish gives this salad a delicious taste and since it is a freshwater fish, the seas are spared. And the little orzo noodles don’t dominate the salad, you get a lot of vegetables and freshness delivered with every fork. In addition, the pasta salad looks nice too.

Pasta salad with smoked trout is a classic

This pasta salad is based on one of my favorite recipes that I make very often: the original orzo salad with smoked trout. In the model I still have artichoke hearts and fresh mint in it. But I also vary it often, depending on what is in the refrigerator at the moment. But the basic ingredients always stay the same: smoked trout, lemon, capers and rocket. And since it’s a pasta salad, they belong too Barley Reisnudeln (Risoni) always in. But you can be economical, because I want it to be a salad with noodles and not noodles with salad.

I usually make a salad for two as a main course. But you can also take the simple salad with you as a side dish or for a barbecue or picnic. It is also a good idea to serve this colorful delicacy with a “snack” with one or two other side dishes. Pretty much any fresh Mediterranean salad goes very well with this pasta salad. And if you are really hungry, you can also enjoy it as a starter. I would recommend a crusty bread with the salad. And another variant would be to serve it on baked potatoes, a bit like kumpir.

Tips on buying smoked trout

As I said, a trout is always preferable to a saltwater fish. At least since then I have the documentation Seaspiracy on Netflix I think twice before I buy fish. I prefer to buy the smoked trout at the market or at my fishmonger’s around the corner. The trout should already be filleted. But in an emergency, I can do it myself. You can also get a smoked trout in the supermarket or in the organic shop. And if you want to try a tasty alternative, I recommend you Saibling. This is my absolute favorite fish. It is a little more expensive than the trout, but it tastes just great. I can also recommend a char for grilling. For me this is the ultimate barbecue experience!

Pasta salad with smoked trout & asparagus

A particularly tasty pasta salad with smoked trout and lots of spring vegetables in a lemon and caper dressing. Full of fresh flavors. For 2 servings as a main course or for 4 people as a side dish.

For the salad:

  • 200
    g
    Orzo pasta
    (Laughter)
  • 125
    g
    Smoked trout,
    roughly chopped (or more, depending on the size of the fillets)
  • 1
    Bund
    Green asparagus,
    the ends cut off (500 g)
  • 1
    Small fennel bulb,
    quartered, cored and thinly sliced
  • 6
    Radish,
    thinly sliced
  • 2
    Hands full of young arugula leaves

For the dressing:

  • 2

    Extra virgin olive oil
  • 4
    THE
    Lemon juice,
    freshly squeezed
  • 2
    Shallots,
    chopped up
  • 1,5
    THE
    Kapern (in Lake),
    the liquid poured off
  • Sea salt and freshly ground black pepper,
    to taste

  1. Bring a large saucepan with cold water and a pinch of salt to the boil and add the orzo. Cook the rice noodles al dente (according to the instructions on the package), then pour them over a sieve and set aside.

  2. Mix the dressing ingredients well in a small bowl.

  3. Steam the asparagus: Heat water in a large pan on medium heat and add the asparagus (only use enough water to cover the bottom of the pan). Cover and steam until the asparagus is soft but still firm to the bite and green and can easily be pierced with a fork (approx. 3-5 minutes). Rinse the asparagus under cold water so that the cooking process stops. Set aside and dry with a clean kitchen towel and cut into small pieces.

  4. Mix the ingredients (orzo, smoked trout, asparagus, fennel, radish) with the dressing in a large bowl. Spread the rocket leaves over the top and mix again.

  5. Divide the salad on plates.

  6. Enjoy!

  • This salad also goes well with steamed green beans instead of asparagus. You can also leave out both ingredients and the salad will still taste great.
