Finally strawberry cake time again! As soon as the first ripe fruits are there, such a delicious strawberry cake with pudding is simply the best way to get in the mood for spring. With a rich layer of ripe, red and aromatic berries. One bite – and the mood is guaranteed to rise!
The strawberry cake recipe that I present to you in this post is admittedly anything but extraordinary. A real classic (just like grandma’s cherry cake with sprinkles). But sometimes the simplest things are the best anyway, right? The strawberry pudding cake is so plain and simple that it hardly needs any instructions: A normal sponge base is followed by a layer of pudding cream – which actually only consists of milk, minimal sugar and pudding powder – as well as a topping made of many strawberries including a cake topping. That’s it. So far, so delicious.
At the bakery you will have to pay 2-3 euros for a strawberry slice like this. And then you might get a piece of strawberry cake that tastes more like sugar than fruit. As almost always, homemade baking is the better choice ?. And the nice thing: Den Strawberry cake with pudding you can do a little different every time. As written, my variant is pretty basic, at least except for the pistachio decoration.

Strawberry cake with pudding

A classic that always goes down well: A moist sponge base is followed by a layer of vanilla pudding and a topping of strawberries and icing. Also tastes delicious with biscuit.
Quantity: 1 Baking sheet
- 800 Milliliter milk
- 2 parcel Vanilla custard powder for cooking
- 80 Gram Zucker
- 1 kilogram Strawberries
- 1 parcel glaze red, for 250 ml of liquid
- 2 tablespoon Zucker
- 4 tablespoon Pistachios chopped, for decoration
Cover the bottom of a baking sheet with parchment paper, preheat the oven to 175 degrees top and bottom heat. Mix the softened butter with the sugar until frothy.
Mix in the eggs well one at a time. Stir in the flour mixed with the baking powder and salt, alternating with the milk. Possibly add a little more milk until the dough falls from the spoon and tears heavily.
Spread the dough evenly on the baking sheet and bake for about 20-25 minutes. Let cool down.
Meanwhile, cook a pudding according to the package instructions (but only with 800 ml of milk instead of 1 liter of milk). Let it cool down and stir it again and again so that no skin develops. Alternatively, cover the bowl with cling film.
Place a baking frame around the cake base (especially if the tray is very flat). Spread the pudding on top. Wash and clean the strawberries and spread them on the pudding.
Prepare the icing with the sugar according to the package instructions and spread thinly over the berries with a spoon and / or brush. Sprinkle the cake with chopped pistachios.
