Sitting on the terrace sipping gin and tonic is a must in summer. But what if the little hunger is slowly becoming noticeable and you feel like a refreshing snack? For days like this we have our raspberry gin and tonic cake. Fruity raspberries meet Lyre´s Dry London Spirit Gin. The whole thing gets a sparkling note from our Energy Aminos in the wild berry variety. It’s a high protein, refreshing, low-sugar cake. We can already tell you one thing: the cake will definitely be the highlight of the next picnic in the park.

Preheat the oven to 180 ° C (top and bottom heat).

Grease the springform pan and set aside.

Put all dry ingredients in a bowl and stir well.

Add liquid ingredients to the dry ingredients. Whisk everything with the help of a hand mixer until a smooth dough is formed.

Pour the batter into the greased springform pan.

Bake the gin and tonic cake at 180 ° C for approx. 35 minutes.

Let the cake cool down for 10 minutes. Then take it out of the mold.

Meanwhile prepare the potions. Put all the ingredients for the potions in a small bowl and stir well.

Prick the lukewarm cake several times with a wooden skewer and drizzle with the potion.

Spread the frosting evenly on the cake.

Gin and tonic cake variations
If you don’t have any raspberries on hand, you can easily make the recipe without berries. Of course, you can also bring in other berries. With a few blueberries, your cake will quickly become a Blueberry Gin Tonic cake. Or use our Sparkling Aminos in the peach variety for a fresh note.
